I'm planning to make some ice cream tomorrow for the first time.
The recipe says I need to bring the cream to the boil - do I need to do anything special to stop the cream splitting/curdling?
Sorry if this is a dumb question - I've never cooked with cream before.

To make ice cream you really need to use double cream. When this is boiled it does not split or curdle. Of course these may be famous last words, but I am quite certain of this fact. Best wishes and good luck with your ice cream making0
