Vegetarian Shepherds pie recipe

Want to make a shepherds pie this weekend, but ashamed to say don't really know what ingredients I need. Obviously I'll need potato and veggie mince (I'm veggie), anyone know what else?
There is no issue so small that it can't be blown out of proportion

  • I do my veggie one with onions, peas, carrots, sweetcorn, and quorn mince and bisto veggie gravy..
    DH just has his with just mince and gravy, no veg..

    I would LOVE to know how to do it without the bisto as i know its not good for us!

    I usually put in onion, mince, salt, pepper, cayenne pepper, tsp mustard, splash of worcestershire sauce & a stock cube. Some people add grated carrot or baked beans. The mince mixture is cooked seperately to the mash, then make up pie & put in oven to heat & crisp up. I usually put grated cheese & knob of butter on top before putting in oven.

  • What I'd do:

    Soften chopped onions and celery in some vegetable oil until transparent. Add your veggie mince and brown that for a few minutes then add some chopped carrots and any other veg to hand together with some stock to cover. You can chuck some herbs in if you have them. Leave to simmer gently for as long as possible. Once the potatoes are cooked and mashed add a thickener to the gravy, transfer the mince mixture into an oven-proofed dish, chuck the mashed potatoes on top and put it in a lowish oven to brown. Drink a nice glass of wine until ready to serve.

    If the gravy is a bit bland you could add a quarter of a teaspoon of Marmite to it to add more flavour. If no Marmite is to hand (but you're a veggie so should be using this anyway for your vitamin Bs) a dash of brown sauce can do in a pinch.

    Really, you can chuck in whatever veg you have to hand. My "standard" is onion, carrot, a handful of peas and a squidge of tomato puree. If it's a very cold day, I add a few drops of Tabasco sauce to make it extra warming.
    I also shove a bit of grated cheese on to of the potato one the pie is assembled, but again, that's optional.

    ETA: I find Morrison's soya mince the best; Quorn tends to be a tad dry imho.

    Thanks for all the replies. BitterandTwisted, will definitely try the marmite idea, I adore marmite often have it a drink instead of coffee so there's always marmite in the house.

    I'll let you all know if it turns out edible!

    One other thing would you serve anything with it? Maybe a side salad?

  • I'd server a nice green vegetable on the side rather than a salad. I'm rather fond of Savoy cabbage, spring greens and Brussel tops but broccoli would be good, too

    I fry an onion, a couple of chopped carrots, two sticks of celery and finely shredded 'leaves' cabbage or spinach. I add some lamb mince and turn up the heat, stir-frying it until all the fat has disappeared.

    I add water and tomato puree (or a jar of bolgnese sauce) and a huge dollop of mint sauce or mint jelly. Turn down the heat and when the carrots and celery are soft, it's ready. I transfer it to a lasagne dish

    Meanwhile I slice some potatoes and boil them separately. We hate mashed spuds in this house, so I just break them up as I put a layer of potatoes on top of the mince. Salt and grated cheese on top with a smattering of butter, under the grill until the cheese is cooked, then serve.

    Very tasty either served on it's own with tomato ketchup/home-made chutney, or with peas and sweetcorn.

    Thanks for all the tips, shepherds pie was great, think used to much stock though so will remember that for next time so it's not so "wet". Definately do again, was very easy

    worcestershire sauce isn't vegetarian. but you can get a veggie version from helath food shops on online.
    Vegetarian's Do Not!!!! eat fish :mad:
