Beef Roast

Got one of these beef joints they have on special in Asda. I never usually have a roast so am not sure what to do with it.
There's only the 2 of us so I'd like it to last a while....any suggestions as to how to cook it and how to divide it into 3-4 meals ?

is it big enough to split?

Maybe roast one half and slow cook the other in a basic stock so that you can freeze the left overs for another meal.

What cut of beef is it?

Frozen meat mustn't be frozen again unless you've cooked it; otherwise it's very dangerous!

    not sure about the freezing,

A while ago i bought a beef joint and there is only two of us. First i just roasted the whole piece. It lasted us quite well,

Meal 1 was just the roast
Meal 2 was beef chow mein
Meal 3 was left over beef chopped up small and turned into shepherds Pie, bulked out with veg. (this went in the freezer)
Meal 4 was a beef and veggie pie (this went in the freezer)

    Hope that helps.

Why is that? I've often wondered....

Yes, you can freeze once cooked.

Personally, I'd pot roast top side, it isn't a particularly good cut for roasting. You could then make it into a stew using the veggies from the pot roast, mince it to make cottage pie, have it cold with jacket potatoes and pickles; any number of things.

You increase the chance of bacteria developing plus you lose flavour and the texture of the meat changes.
