Soup recipe- Pumpkin/Butternut squash and sweet potatoe

You might find that a grated apple goes better in a Spicy Parsnip Soup- I've seen that recipe mentioned in websites, but never heard of Pumpkin and Apple.

I make pumpkin and apple soup - its gorgeous!
1 medium pumpkin, 3 onions, 2 apples, 1 tsp each ginger and cumin, enough water to cover, simmer till soft, blitz with stick blender, cool and leave in fridge for flavours to meld. When ready to serve, bring to the boil, add milk (I prefer soya) stir through and warm through again.

(you can skip the fridge stage and go straight to adding the milk if you want to eat it straight away)
EDIT the easiest way to peel pumpkin or butternut is to cut it in half, remove seeds and stringy stuff, spray with fry light, or brush with oil or butter, sprinkle with salt and cook in oven at about gas 6 for about 30 - 40 mins depending on size. The pulp comes away easily fron the skin then. Don't forget to toast the seeds in the frying pan with some oil and salt for a quick snack :-)I'm a retired employment solicitor.
