What Lamb cut do you think kebab shops use for shish kebabs?

    Ahh, nice to see a man with good tastebuds :p

    Do they marinate it before they cook it? That would break down the protein chains a bit, making it more tender.

    Yeah I guess that must be it, because the neck fillet was about £13.50 a kilo & I used 0.6 for DH & I.

  • I've had a look a at a couple of cookery books on Street Food and the seem to go for leg of lamb.
    Not a street food version but very good :-
    Judith Wills - Top 200 Low Fat Recipes
    2 garlic cloves,peeled
    1tsp salt
    1tsp ground cumin seeds
    1/2 tsp ground dried chilli
    1/2tsp ground black pepper
    Zest and juice 1/2 lemon
    1tbs olive oil
    400g lean leg cut into bite sized cubes
    1 lemon cut into wedges
    1 small onion (about 100g) quartered and seperated into layers

    Crush garlic and salt together into a paste
    Add paste to cumin, chilli.pepper, lemon juice and zest and oil in a mixing bowl combine thoroughly add lamb cubes mix well and leave to marinate for several hours.
    When ready to cook preheat grill. Add lemon wedges and onion slices into marinade for 1 minute then thread onto kebab sticks.
    Put on a rack under a hot grill for about 15 minutes turning halfway through cooking.
    Serves 4 285 calories and 16g fat per portion.

    They don't buy their meat from the same place we do. They get it from "kebab meat suppliers", so no supermarket mark up on the price they pay.

    There is nothing wrong with Shish kebab meat. Shish kebab meat is real lamb not constructed rubbish like Donner. I think it is lamb leg steak as there is very little fat in it, shoulder has lots of fat.
