Meringue Question?

Hello, I am contributing mini meringue nests with cream and fruit for a buffet tonight..

How long before am I able to put the cream on without them going soggy? We will be eating at about 9 but we will be leaving at 7 ish..

Or would you say to take the fruit and cream seperate and prepare them just before?

    Depends on numbers and time availability really!

    They'll be much easier to transport separately and if you have toppings prepared, will only take a very short time to put together, plus I think things like that can start to look a bit 'well-travelled' if you're not careful and look more appetising when freshly put-together.

    They wont go soggy, but they will be much easier to transport without damage if you keep them separate until you get there
  • Thanks, I will do, and I will make sure that next time I volunteer for pickled onions or something instead ;)

    Meringue, whipped cream and pickled onions - I don't think Michel Roux Jr would serve that in his restaurant, but you never know!

    I've actually come up with a devious plan so I can prepare them at home, I have the divided boxes that the meringues come in, trouble it they are stacked 2 in each section, but I just found another 2 empty boxes the same so can have 1 section each so they will be safe for the journey :-)
