Help, need a microwave cake or pudding recipe please!

    Hi

    I have seen a few mentions of a chocolate pudding that can be done in the microwave but I cannot seem to find the recipe. Anyone know what I'm talking about and have the link please?

    Microwave Chocolate Pudding
    Pudding
    4 ozs soft margarine (100g)
    4 ozs caster sugar (100g)
    2 eggs
    3 ozs Self Raising Flour (75g)
    1 oz cocoa powder (25g)


    Sauce
    1 oz cocoa (25g)
    1 oz caster sugar (25g)
    1 tbsp Golden Syrup
    6 oz can of evaporated milk (170g)
    1 oz butter (25g)
    2 tsp cornflour


    Recipe allegedly serves 4, depends how chocoholic they are.

    Prepare 1½ pint pudding basin, by greasing & base lining with greaseproof paper. Base line = leave a bit in the bottom
    Pudding
    1) Place margarine, sugar & eggs in a bowl, sift in flour & cocoa, beat until smooth.
    2) Spoon the mixture into a 1½ pint ( 750 ml ) greased & base lined pudding basin, level the top and cook for 4 mins on full power. (this was when 700w to 850 w was full power)(5 mins in our microwave) until well risen, and pudding springs back when pressed with finger tips. Run a knife round the edge of the sponge, invert the basin onto a serving plate & LEAVE FOR 5 MINS BEFORE REMOVING BASIN.
    3) Meanwhile, make the sauce. Sift cocoa into a large heatproof jug, add caster sugar, syrup, then gradually stir in the evaporated milk. Mix until smooth, add butter cut into pieces.
    4) Cook for 1 minute ( I make that 1½ ) on full power until hot. Mix cornflour to a smooth paste ( I use 3 teaspoons) with a little water. Stir this into the cocoa mixture, and cook for 1 min (2 in ours) until thickened. ( I find that if this hasn’t worked, stirring well, and putting back in microwave for bursts of ½ minute, interspersed with more stirring to maintain smoothness, eventually works)
    5) Serve

    my family always decide at the last minute that they fancy a dessert. i too get the odd craving for a piece of cake or something sweet. are there any tried and tested recipes for cake/dessert that i could try. the onlt thing i do now is try and keep some chocolate muffins about as when you put them in the microwave the cake goes all sponge like and the chocolate bits melt into a kind of chocolate sauce. tastes very like the choclate pudding i used to get at school. my family loves this with chocolate custard. would love some new recipes you all may have liked?

  • my friend made that mug cake the other day and said it was delish.

    when my parents bought their first microwave it came with a recipe booklet and my dad decided to make jam roly poly, the door burst open and jam roly poly exploded all over the kitchen and it took forever to clean lol. methinks microwaves are better these days :p

  • Sponge pudding!

    4 oz s/r flour
    pinch of salt
    4 oz butter
    4 oz caster sugar
    2 medium eggs, beaten
    2 tbsp fresh milk

    Sift flour and salt into bowl, cream butter and sugar (in separate bowl) until light and fluffy.
    Add eggs a little at a time with a spoonfull of flour, beating well after each addition. Fold in remaining flour alternately with milk.

    Transfer to a greased and base lined 1.5 pint pudding basin. Cover with buttered greaseproof paper. Crease paper down sides to make a close fitting cap (I put an elastic band round it then to keep it in place).

    Cook for 3-4 mins (depends on wattage of your microwave), until surface is still slightly moist and a wooden cocktail stick inserted in centre, comes out clean.

    Allow to stand for 3 mins before turning out onto a warm plate.

    Yummy and so quick!!

    You can make it into a :
    choc sponge, by using 3 oz flour and 1 oz cocoa powder. And adding half tsp of vanilla essence to the creamed butter and sugar.
    fruit sponge, by stirring in 2 oz of currants, sultanas or raisins after the eggs.
    jam/marmalade or syrup sponge, by putting 3 tbsp of whichever you want into bottom of a greased and base lined basin before adding the pudding mixture.
