Ok so I went a bit over board! Want to bake some cakes but...

I buy my eggs free range from a local place, as they are so cheap incomparision to the supermarkets, anyway I normally buy 1doz large as they are great size for omelettes, etc, but whilst there I thought "ooh I want to bake some cakes this week", so I bought 1 doz medium eggs cos most cake recipes are medium eggs, now I'm home I've thought as great, as it is I can bake this week what I dont want to do is open up all my lovely recipe books and pick out all the really mouth watering ones that will cost a fortune to buy all the othe ingredients so.............................................................what really nice cakes, muffins etc can I bake (some that could be made in to small sizes and frozen for lunches) that are still money saving, I'm desperate to stick to my food budget this month as we start our dmp next month and I have been going over it :o, so I want to be able to do this nice cooking but not spend too much!

    I think if you freeze anything you like to bake, then it wont be a waste, as you can take out what you need, when you need it.
    Muffins, and cupcake type things are ideal, as they are their own portion ;)
    If you are doing loaf type cakes, then, slice first, wrap each slice in cling film individually, before you use your normal freezing routine.

    Alternatively... make a quiche that you like. Slice into portions and freeze

  • I made carrot cake today. It works out pretty inexpensive if you use some wrinkly carrots from the bottom of the veg basket. :D

    Plain fairy cakes are cheap too. they freeze well and are great for lunches.

    you can actually freeze any eggs you can't use now, simply blend the yolk and white well, make a note of how many ice cubes each egg makes (usually 2) and freeze for later :p

    I take it you just defrost, use in cakes, scrambled eggs ect ??:D

    eggs do keep for quite a while - do you need to use them all in one go?
  • Hi little Vics, its just that I bought 2doz in total, which is a hell of a lot, dont want to waste them, so if I have some plans in my head to use them, they wont just sit there.

    Do you like creme caramel? It's easy to make and home made is much nicer than shop bought. Delia has a recipe HERE. I used to make individual ones in teacups.
  • Brownies need a lot of eggs, usually 4-6 per recipe.

    Bread and Butter pudding would use up stale bread and use some eggs. have a recipe if you need it.
