As I have a lot of tins of beans in my store cupboard as well as peeled plum toms and we are having to cut the food budget to £2 per day at the moment (for 2 of us) any suggestions. Last night I did this mexican tortilla bake thing using up the leftover lasagne sauce instead of a burrito sauce but it was so nice we scoffed the lot. I also have some packets of salami slices if that helps? Don't say pizza as that is already made and in the fridge for tomorrow...... I'm really looking for something I can serve with either rice of the reduced crusty bread I got yesterday to use it up. My brain still isn't working after the bookcase incident...............But I'm going to say this once, and once only, Gene. Stay out of Camberwick Green0

How about a bean chilli, using the beans instead of meat? Cook onion, garlic and chilli in a little oil, add a tin of tomatoes (to serve two, add more tins if you want to freeze it or eat it another day), some white wine vinegar and the beans. I like to add a little cocoa powder to make it extra tasty.0

oooh these sound fab - we're having a chilli on friday or sunday so i may use the bean one. I've found a fab cheese, onion and bean pie on the recipe thread and also in the chorizo thread I've seen something which I could adapt to use the salami slices with instead. As usual MSOS comes to the rescue!!!But I'm going to say this once, and once only, Gene. Stay out of Camberwick Green0

If you drain and rinse the beans, you can use them in just about anything. I'd add them to pasta sauces, chillis, curries, soups, and the tomatoes too!
Or you can have them on toast with a bit of chilli powder, brown sauce or black pepper.May all your dots fall silently to the ground.0 -
My kids aren't keen on plain beans on toast.
I add a sweated onion, half a tin of drained chopped toms and a slack handful of grated cheese and a bit of black pepper.
Apparently this doesn't taste like beans anymore, more like "beany lumpy pizza" according to DS2 when smaller.
You cannot live as I have lived an not end up like me.

I chuck el cheapo baked beans (juice an all) into all kinds of dishes. Chilli, cottage pie, casseroles.
Baked beans, fried onion and cripy bacon topped with mashed potatoes and cheese and baked in the oven like shepherd's pie is good too. HTHLife's a beach! Take your shoes off and feel the sand between your toes.0 -
My kids are eating pasties filled with beans cooked in a tomato sauce with carrots, peppers,onions and spicy sausages. They seem to be goig down well.0

You'll all be delighted to know I finally settled on a rustic spanish style casserole - two red onions, tin of kidney beans, tom puree, cayenne pepper (may have been a bit heavy handed on that), garlic and chilli. I have also cut up a few slices (about half the packet actually) of salami and put that in at the end now that it's nearly done. TO be served with patatas bravas and crusty bread. Right, I'm now off a bath before OH comes home.But I'm going to say this once, and once only, Gene. Stay out of Camberwick Green0
