After yesterdays cake sale at playgroup (I was still baking at 11am) where I contributed 10 cakes, I thought I would get ahead for the next sale on 17 December.:A
I'm making Christmas cake, yule logs and mince pies with brandy butter. The question I have is
Can these cakes be frozen once they've been iced?
I plan on doing royal icing on the Christmas cakes and buttercream icing on the yule logs. The mincepies won't need icing and the brandy butter I have frozen successfully before.
I really can't be running round making:think: so many cakes just before Christmas and the break up of schools, so I need to get as far ahead as I can. Any advice gratefully received.

i freeze my hm iced maderia cakes and they defost very well. Just have to open freeze and then wrap, remembering to unwrap before defrosting.
I just defrosted a M&S xmas cake about 6 weeks ago and it was fine, tasted even better than it did at xmas,icing was very good.

Hiya, I would freeze the mince pies in batches to 12.
Christmas cakes are stored in tins or cake boxes and last for years uneaten so no freezing required. I think cooking Christmas cakes to give away can be quite costly though! do they pay for all the ingredience? My cake costs around £15 to make, with all the fruit, marzipane, icing and brandy to feed it.
The Christmas logs I would make last and take fresh.

Thanks Julie - I'm doing small cakes and using a voucher that we've had for ages to get all the Value products that I need. Selling for 10 pounds iced, 5 pounds of that goes to me. I'm planning on shopping at Makro / Costco to bring the price down further - AND if Makro do small mince pies cheaply then I'll buy theirs!!Me, OH, grown DS, (other DS left home) and Mum (coming up 80!).
