What to serve with sweetcorn and corriander fritters

Am making these this eve (Sainsburys recipe) to use up a load of corriander that we have but not sure what to serve with it. Veg wise we have Potatos, Brocolli, Peppers which need using most plus carrots, 2 mushrooms, and courgettes

Any one got any ideas....?

    I'd strifry the brocolli, peppers, mushrooms and courgettes.
    Trying very hard to be frugal and OS - just plodding on and doing my best!

    I would go with the finger food option...
    Make a dipping sauce for the fritters (perhaps sweet chili?) and as ubamother says..potato wedges and you can also make a soup with the broc.,carrot and peppers ;)
