Homemade soup - can I do this?

Hi guys,

This is a quick question? I have in my fridge:

- left over chicken
- sweetcorn
- bowl of leftover mashed potato
- stock from my roast chicken at the weekend
- onion
- 2 mushrooms

Is it possible to make chicken and sweetcorn soup from this? I'm trying to go for the Convent Garden style fresh soup (mmm!) but I'm not sure how to do it? Is it just a case of throw everything in, blend and heat?

    I would fry the onion in a little oil or butter, then add the mushrooms. Stir for a couple of minutes before adding the sweetcorn and leave it over a low heat for about 10 mins to sweat. Then add the chicken and stock and finally the mashed potatoes to thicken it.

    I would start by frying the onion, stir in everything except the sweetcorn and heat through. Put it in the blender, put it back in the pan with the sweetcorn to reheat. I like my sweetcorn whole, but you might have different ideas :D

    Should be tasty. My OH's mum regularly used to feed them soup on mash when they were kids and short of pennies. Using the soup a bit like gravy over the mashed spud. He thinks it's strange that no one else seems to eat it!
