cuple of questions abt BM ingredients

i've read the archived posts but can't get answers.got the panasonic SD253 btw.

firstly i got sum fresh yeast in tescos after reading bits and bobs on here.i no i can freeze it but how long will it keep 4 in the fridge? also if i normally use 3/4-1 tsp of dried yeast,how much of the fresh yeast shud i use? and HOW do i use it when putting it in the BM? hope sumbody understands all that.


second question.i bought a reduced bag of xtra strong wholmeal-was damn cheap.will the bread b ne different cos it's stronger? i did ask @ tesco's bakery but didn't really get an answer.

    I use 1/6th of an ounce of fresh yeast in my BM to make a 2LB loaf.
    Mix it with the luke warm liquid first add it to the pan ,then add the dry ingredients.You wont be able to use a time delay with fresh yeast as it begins to work as soon as it is added.
    You can keep fresh yeast in the freezer for at least a month(Ive had it 6 weeks and still good).
    The extra strong wholemeal is wholemeal for bread making as opposed to cake making and so should act like bread flour(your recipe leaflet for your BM should tel you if the recipe needs to be different for wholemeal rather than white flour). You usually get a slightly denser loaf with wholemeal flour.

    always use the wholemeal 4 bread making but wasn't sure if the extra strong wud make a difference.
