what do you do with cassia bark?

picked a bag of it up today for 25p and have no idea what it's used for

Cassia bark is a coarse form of cinnamon and you use it in much the same way. It's quite difficult to grind though, and it's got a slightly stronger flavour, so it tends to be used in savoury dishes (eg curries) more than sweet, although it's fine in sweet dishes if it's ground to a powder. You'd use it like a cinnamon stick - put it in the sauce and then remove it before eating. HTH.0

It's good if you're using it to make spiced jam. The bits don't disintegrate so it's easy to pick out. Thus speaketh the voice of experience0
