I want fluffy bread!

Hi all,

I've been making my own bread rolls for about a month or two and have found that theyend up quite dense. Is there anyway I can make them softer or more fluffy!!

The recipe I'm using is quite basic:

750g Strong White Flour (usually the cheapest I can find)
25g butter
1 tsp salt
Yeast (I think it is about 6oz)
400ml lukewarm water.

I think thats is all, trying to remember it off my head!

    I've found that adding Vitamin C to my bread makes it lighter and it rises more too. However, I always buy strong bread flour - I like Lidl's at 49p per bag. I don't seem to have got as good a result using ordinary plain flour, although I would use it if I had nothing else in.

    Hi Jitsuguy.

    Looking at your recipe, I'd say that you could do with a bit more water, as that's only about 50% liquid (baker's term there; all percentages are expressed as the total weight of flour ;)). Your dough is probably quite stiff, which will result in a dense crumb. My bread usually has around 65-70% water, although his can be a bit sticky. If you have a Kenwood Chef or some other food processor, than you can whack it all in there and mix it on high for a while. Another tip is to add an egg, which will add some moistness to your dough. Also, are you waiting long enough to rise your rolls before you bake? With more water, they should rise higher faster.

    /edit Just found this recipe for huge baps (no sniggering at the back), that you could try out. They sound really good.

    Thanks for your input. I'm leaving them to rise for about an hour. I'll try adding some more water and see where I get.
