soaking fruit for Xmas cake

Started to soak the fruit for our Xmas cake in brandy yesterday and was going to make it today, however I'm now thinking that with a day off on Wednesday, I'd rather make it then. Do you think if I stirred the fruit daily and kept it covered with cling film in the fridge, it would still be OK on Wednesday?

I usually leave mine to soak for at least 2 days
I keep it covered and top up with a dash of brandy and a good stir everyday, I end up with lovely plumped up fruit.....mmmm!Murphy's No More Pies Club member # 140 - lost 40 lbs

Have a look at Delia's Creole Xmas cake - she makes you heat all the fruit up with an extraordinary range of booze, 'simmer' for 15 mins and then store in fridge for a week !! I do this one every year and it's wonderful (tho I don't always use exactly the booze that she recommends - never have rum - but I usually just slosh in a bit of whisky or something if I have it and it's just as good). Yum !0
