Need Ideas For Low-Fat But High Calorie Snacks/Cakes

Hi
I have been advised today that I need to cut down on my fats for the next 4 weeks but stick to a high calorie diet
I need to be aiming for 3000 cals+ a day but am going to find this hard with limited fats.
Im looking for recipes for cakes, biscuits and snacks but they need to be tasty and easy to make:D I recall a cake from Rosemary Connelly a few years back which was a banana cake I think and was delish and moist, but cant find the recipe anywhere.....anyone:p
Im ok with my lunches and main meals although ideas are welcome, I can have sugars but really needs to be a protein enriched meal if ideas offered.
I would like to do say a batch and for them to keep for a few days so I can just pick at when I want.
Any advice will be greatly apreciated and hopefully will help with some new tablets working better for the next 4 weeks.

Fat free banana loaf =
165g sugar,
1 egg,
150g s/r flour,
3 ripe bananas.
Mix all ingredients, and bake in a loaf tin 180 C - 30 minutes.
Got this recipe off this site, but cant find it now. It also suggested adding a chopped up mars bar (and ive made it with a chopped up snickers, lovely!!!)0 -

all-bran loaf from mary berrys fast cakes
12oz 350g mixed dried fruit, 8oz 225g demerara sugar, 1/2pt cold tea
5oz 150g sr flour, 5oz all bran, 1/2level tsp baking powder
1beaten egg
put fruit, sugar and tea in a bowl, leave overnight, grease and line a 2lb tin heat oven to 150c gas2
stir rest of ings into fruit mix thoroughly, put in tin, bake about 2hrs or till risen slightly and shrunk from sides of tin ,serve with butter or plain0 -

I have a swiss roll recipe!!!
2 eggs,
3oz caster sugar,
3oz flour.
220C - line tin with greaseproof paper, spread on and cook for 7 - 8 minutes. Do not over cook.
For chocolate swiss roll, substitute 1 oz flour for 1 oz cocoa.0 -

This is gorgeous, I use half the sugar, wholemeal flour and a tablespoon of cinammon.0 -
me again sultana bread
8oz sultanas, 6fl oz cold tea, 8oz sr flour, 6oz demerara sugar
1 lrge egg beaten, pinch salt
soak sultanas in cold tea 5hrs or overnight oven 180oc gas 4
grease and line 2lb tin, put flour, sugar, salt in a bowl add sultanas and egg beat till smooth, put in tin smooth over bake 1hr cover with greaseproof paper last 15mins if browning too much leave to cool in tin 10-15mins

how about dried fruits?
My OH loves dried Apricots and Plums etc but they have a lot of calories as you eat more than you would if they were not dried.0 -
Fat free cake:
3 eggs
4oz / 120g flour
4oz / 120g caster sugar
1 tsp vanilla essence
Seperate the eggs. Whisk the whites till peaking (add a pinch of salt if you're doing it by hand). Whisk in the yolks and vanilla essence. Now whisk in the sugar til the mixture forms a pale foam which leaves a trail when you lift the whisk. This takes a while and requires a firm wrist. Much easier done with an electric mixer if you have one and you can probably get away with just whisking the whole eggs, vanilla essence and sugar together. Gently fold in flour using a large metal spoon. Bake in a preheated oven at gas mark 3 / 170C for half an hour.
I like this cake with buttercream but if you're avoiding fat I'd suggest layering it with jam, jelled canned fruit, or pie filling. You could decorate it with royal icing which is made by whisking an egg white till stiff, then beating in icing sugar to the desired consistency.0 -
meringues are usually fat-free - you could have them with fruit and fat free fromage frais0
