Stupid Question... How to make Soup

Hi all

I've recently started cooking from scratch (or there about) shameful at the grand age of 25 and I'm loooking for a good reciepe for leek and potato soup.

I don't want to leave the house I'll be tempted to buy lots of things that I don't need so I have the following in

7 leeks (reduced to 20p in Asda - thank you very much!!)
A bag of potatoes
2 onions
Home made chicken stock from Sundays Chicken
What else do I need for leek and potato soup

I also have..
Some curly kale that needs using
Loads of carrots that are starting to look past it
1 sweet potato
2 red peppers
4 salad tomatos
A huge loads of Cooking Bacon
Packet ham
Double cream

Herbs and Spices i have in (I go through phases of buying them then they all expire)

Dried Oregano
Crushed Chillis
Tarragon
Peri Peri
Mustard
Nutmeg
Turmeric
Basil

    You have everything you need. Slice your leeks finely and fry gently in oil or butter til soft - the longer a slower you do this the better. Peel and dice your spuds and add to the leeks, add stock and bring to simmer, simmer gently to you potatoes are soft. Whizz if you want.

    Hi stokegal,

    You shouldn't need any extra ingredients if you have milk in. I make leek and potato soup by chopping up one or two medium potatoes, an onion and about four or five leeks. Melt some butter in a pan and add the the onion, and potatoes and leave to sweat (cook gently over a very low heat) for about 15 minutes. Season well with black pepper and add stock and some milk. Simmer until all the veg are cooked. Before eating check the seasoning and add salt if you think it needs it. You can serve it as a chunky soup or use a stick blender (or food processor) to make it smoother if you want.
