I am too lumpy and bumpy to go for a style like that hence why both mine have some sort of gathering

Changing zip to corset can be done as long as suitable material can be sourced for a modesty panel if needed.
Taking in a dress with a corset back has to be done at the side seams. Simply tightening the lacing isn't good enough as you have discovered. Should be a pretty straight forward job.
