You absolutely have the right to review the evidence against you. You can request copies of same as you go in and, if necessary, ask for an adjournment to review it.
If you wish to challenge a witness statement, ask for the opportunity to question the witness. (Be prepared for the answer "no, they are afraid of you").
If you do not have anyone with you (and it is always advisable to do so), take your own notes, if they put any pressure on you, note that down too. If they take notes ask for a copy at the end of the hearing. Read them through and, if anything omitted or added that is not right or is relevant ask them to put it in.

Once you are able to confirm whether or not you have received the pay owed during the suspension period, if the answer is not you should immediately notify them that:
a) You believe they have committed an unlawful deduction of your wages;
b) That you intend to take them to the ET and prove your case against them unless the fault is immediately rectified.
I'd also suggest that you state that you are attending the disciplinary hearing under protest, as you believe they are in breach of the ACAS Code of Practice on disciplinaries for a) not completing the process in a timely manner and b) not providing you with a list of documented evidence they intend to use against you.0 -

IANAL, so I can only suggest that in the meeting, you should ask exactly what their evidence is; it is possible that it could all come back to that silly pretend drink from a bottle and/or someone seeing the wrong thing.0
