One pot three meals needed...

Hi Guys

Can you please help, we have a whole chicken and would like to get three to four meals out of it if we can. I have a few things like fresh veg that need to be used up and lots of dried bits and pieces. Please can you give me some ideas as to what I can do with it!!!

Things we have

Potatos
Parsnips
Onion
Cucumber
Mushrooms
Red Split lentils
Pearl Barley
Butternut squash
Tinned peas
Chick peas
Baked Beans
Spaghetti
Pasta Tubes
Orzo Pasta
Tinned Tomatos
Tomato Puree
Tomato Passata
Honey
Mustard
Various herbs/spices
Chicken Rub

We can pick up a few things to finish off aswell, we have other bits and pieces aswell I just can't think right now.

Any help appreciated.

  • Just a couple of questions - how many are you feeding and how big is your chicken? You should, quite easily, get 2 meals for 4 from a 1.5kg chicken plus stock and enough scraps for say, a risotto. Is this the kind of numbers you are dealing with?
    Making 2 curries or chicken and veg in a sauce or a chicken and veg pie type meals will stretch it even further.

    Hi Guys

    Thanks for your quick replies. It's to feed two adults and 1 child and it's a 2kg chicken. What would be the best way to cook it to keep it moist and from drying out? Thanks for your help guys!
