Stopping avacados going brown (without lemon!)

Title says it all! I want to take avacado sandwiches for lunch at work but I haven't got any lemon juice to stop them browning. Is there any other way I can stop them going a manky colour, really does put me off my lunch when they turn the colour of sludge! :o

    The only thing I know is keeping the stone from the avocado in the bowl with the flesh untill you use it, not much use wth a sandwich is it?

    very close fitting cling film can help, and it is true that some varieties of avocado discolour more rapidly than others.
    Do you have any mayonnaise?
    The main thing is to separate the cut flesh from the air.
    Found this on another forum:
    "Actually, lemon or lime juice doesn't really help much with avocado. The best way to keep avocado from turning brown is (1) use it shortly after you cut it, and (2) if you must store a cut peice of it, cover the cut end (or the top of the guacamole) directly with plastic wrap pressed right on the flesh/top of the dip."
    Would it be possible to take your sandwich ingredients with you and make your lunch from fresh?
  • The brown is where it has oxidised (vegetable equivalent of rust!) on exposure to air. The only purpose keeping the avocado stone in the flesh would have is to protect the bit of the flesh which is directly under the stone!

    Vinegar would probably do a similar job to lemon in stopping discolouration, but it probably wouldn't taste very nice! Seakay's suggestion of mayo sounds like a good one, though.

    It can't be that difficult; M&S used to make some fabulous prawn and avocado sandwiches.

    I have put a stone in a bowl of avocado and the whole thing stayed green not sure how it works but it does.;)

    I just wrap my chicken and avo sarnies in foil and I've never had a problem!
  • I have mayo so will mix a bit in, wrap tightly in foil and hope for the best! Thanks
