Remortgaging with Repayment Mortgages

I've had over the last few years an interest only mortgage and remorgaged every 2 or 3 years keeping on discounted mortgage rates. However, am now looking to borrow more and use a repayment morgage in addition to the interest only. Does anyone know what are the typical rates the capital of a repayment mortgage is paid off, for example after the first 2 or 3 years of a 20 year team what percent might you expect to have paid off?
Are there any pitfalls with remorgaging a repayment mortgage?
