Cooking from scratch

I do some cooking from scratch now - I rarely buy readymeals, sometimes make my own bread, have been known to make my own kefir, grow my own beansprouts.
I'm looking out the best methods/recipes for going further down that road - as in:
- making my own soft cheese
- making my own pasta
- making my own vinegar
etc
so - I've got a few bits and pieces written off t'internet now - but am still seeing what I can find.
To date - I've found a few interesting websites for looking round - so thought I'd share:
