what to do with bacon and courgettes?

Hi,

Pork chops we were gonna have for tea have gone off, so looking in fridge for sommat else, and realised I need to use up some unsmoked bacon, and some courgettes. Also have mushrooms, eggs, potatoes and various other staples like pasta.

Can't do omelettes or fritatta as have 3 year old who will not eat them, any ideas?

    Fry both with mushrooms and toms/tin of toms (if you have one), few herbs etc and serve with the pasta?

    As for dinner we have ham, mushroom and cheese potato bake and then roasted courgettes and carrots on side.

    Hi, We don't have any cream, but live next to a shop, so could go get a small pot... Just had a thought - would a carbonara type thing work??

    I fancy some creamy pasta for a change...we always have tomato based ones...

    Off to shope feeling inspired (and hungry!)...

    For a lower fat version carbonara type of sauce I use either a packet of dry mushroom soup or a tin of Campbells cond mushroom sauce or if really desperate make up a substitute (not lower fat) sauce with mayo, milk, cheese etc

    1,000 Posts Combo Breaker I've been Money Tipped!
    Boil potatoes till half cooked then finish in a frying pan, add the courgettes, bacon and mushrooms, season well. Cook it all over a fairly low heat slowly so that the potatoes form a nice crust, turning the mixture over now and then.

    Serve a pile on each person's plate with a fried egg on top.

    pass the ketchup or chilli sauce;)

    Sainsbury's brilliant bacon pasta is very good, if you can get hold of some creme fraiche (it's on this page, just scroll down). I've made this using unsmoked bacon and it's just as nice.

    im problay to late but cut the bacon in to bits fry boil pasta. courgettes cut to bite size add to ur frying pan then u need a soft cheese mix and enjpy its super yummy.

    Hi all thank you for all of the delicious ideas. I actually made a sort of creamy pasta sauce in the end - a la carbonara.

    I matchsticked the courgette, chopped the bacon, sliced some shrooms, and fried them off with 2 cloves of garlic (well 2 cubes of the frozen already minced cheats stuff), and also boiled some spaghetti.

    When it was fried I added some single cream, but not so it was runny, just so it coated the meat and veg, and the put the spaghetti in and mixed it round with a generous sprinkle of parmesan. Loads of black pepper after I dished up DD's portion, and it was absolutely delish... even DD who is 3 hoovered it up!

    Think this will be a new family favourite!!

    Thanks for all of your ideas though - will def try them next time - though not sure if I'm up to making quiche!!
