I have a tube of said product in my fridge, instructions say keep only 4wks its been there about 6wks, will it still be okay to use. Another thought is there any reason why I can't de-tube it and freeze it. Hoping to make a bolognese sauce later with some tomatoes that need using up.

No reason at all why you can't freeze it;)
I hadn't realised that it had to be used in a certain time frame. I just keep mine till it goes mouldy:D0 -
I had no idea of a time frame either! Mine has been open and in my fridge since I moved in 2months ago, and I used it last night and it didn't kill me!

That's the time frame, thenI always try and squeeze my tube from the bottom - that way there's no air space left in, which tends to promote mould growth

I always freeze mine (AND Passata) into ice cube trays for using at a later date. When they're solid, I put them into small freezer bags so I can just take out one or two for whatever I'm cooking.
I'm not fond of strong tomato flavours, but OH loves it, so a whole tube of puree very often goes off if it's left in the fridge door.
I also freeze any left-over juice from tinned tomatoes AND baked bean juice (bbj gets mixed in with mashed potato when feeding the youngest two dgk's as they can't have 'dairy' mashed in).0 -
I had a tube recently that I'd had opened for a couple or 3 months, and it swelled up and when I opened the cap it "exploded" over the sink. So now I'd freeze what I couldn't use in a month, just in case!0

I didn't either and I keep mine in the cupboard :eek:
Been doing it for about 15 years though and we're not dead yet0
