My bread keeps collapsing

Hi all

Need some advice.

My bread keeps collapsing. It raised well, but as soon as baking starts, it collapses.

I tried to adjust salt (put more, and less) and it did not work.

Has anybody had similar problem and how did you solve it?

Thanks.

PS: I tried to search bread making thread but could not find anything.

    Where do you put your yeast?? I ask that as when I first had a bread maker I just put it anywhere and my bread wasnt well risen.

    when you put your flour in the bread pan, scoop a line out of the flour and put in your yeast. when you have done that cover the yeast up. I think its to do with the salt and yeast.

    Sounds like too much yeast - try reducing the amount by 1/4 of a teaspoon - that worked for me anyway !!!

    When / if my bread starts to do this I assume its got something to do with the yeast.....and I throw the old batch away and start with some fresh stuff. Usually fixes it for me.

    Are you using a breadmaker? or doing it the old fashioned way?

    It's actually too much water. Reduce the amount by one or two tablespoons and the situation should improve dramatically.

    Thanks for all the tips.

    I will try it again tonight: will reduce water and reduce yeast (got last sachet).

    Meanwhile I will get some new yeast.

    Zombiecazz, I do use bread maker. Old fashioned way? I am afraid I am not that ambitious.

    Hi

    Last night, I baked another loaf reducing the amount of water and putting only two tsp of yeast instead of the whole 6g packet.

    The result was mixed: the bread did not collapse, but it came out a bit soggy, and not a fluffy as it used to be.

    Does anybody know what makes the bread fluffy and soft?
