Hi all today I bought a fresh chicken that was use by today (reduced
). I roasted it and we have had a chicken dinner for tea , however there is loads left as it was large, its now in the fridge.
Instead of just cold chicken and chips or something similar for tea tomorrow I want to have a go at a chicken Pie as i've also got some ready rolled shortcrust pastry.
Anyone got an easy recipie ? i've got herbs, mushrooms, onions , spring onions etc . Its the sauce in it i'm not sure about ? what about condensed soup anyone use that or any other recepies.
Also if i made 2 small ones, could I freeze one? i thought it would be ok the chicken was fresh not frozen.

Hi Pink, for chicken pie I would make a white sauce and throw in some cooked vegetables. Pastry top.
I would not freeze the pie as the chicken would have already been heated up x 2 times.
Chicken is a meat you have to be carefull with and food poisioning, I would not heat up chicken 3 times.
Can you not put some in sandwiches?If winter comes, can spring be far behind?

Hi,
I'd make a white sauce - maybe 2oz butter, 2oz flour, and a pint of milk. Nigella Lawson suggests adding about half a chicken stock cube to the sauce at the melted butter and flour stage, then proceeding as usual. You could chop the onions and/or spring onions and soften them in the butter before adding the flour and stock cube, and add the mushrooms and a good pinch of dried mixed herbs when the sauce is coming together. Be careful not to overseason as stock cubes are very salty!
You can certainly freeze this pie as the chicken was fresh, and for future reference it would also be ok if you'd bought a frozen raw chicken, then cooked it. It's refreezing raw chicken or cooked chicken that's dangerous, not freezing it when you've cooked it.

hi thanks, i can actually make a white sauce (often do for lasagne) but wasn't sure if it would have enough flavour , by the time we've made sandwichs i'm sure there will only be enough left for tea anyway.

Chick & mushroom pie is yummy. I chop mushrooms and put in the microwave, then tip the contents into the hm white sauce, then season to taste. You could sweat the mushrooms in butter instead (I'm always trying to cut the calories - that's why I mike them)Weight loss - here we go again - watch this space!

White sauce flavoured with bay, onion and peppercorns is traditional.
I like to make extra roast gravy, thicken it with a little roux (butter and flour melted together) and use that for a change.0
