SAR comes up suspiciously short

Hello , I recently SAR'd a few companies (old mortgages,credit cards ). With the mortgages I was hoping to see what I paid upon exiting the mortgages. With the credit card companies I was hoping to see a copy of my Default.

First off,no default in my M&S sar. I will tackle that as I have seen templates etc on here.

2nd, my mortgage companies come up short with exit info. I find this strange. They have all the bumpf on the start of the mortgage (letters to and fro solicitors etc) and many copies of the same documents etc to pad it all out.
What they DON'T have is anything pertaining to the redemption ,even though this ,by definition,is more recent than the initiation of the mortgage.

In conclusion,I feel I am being fobbed off and wonder if anyone else suspects that all their info was not provided to them on a SAR...?
What can I do ?
