Hi guys and girls.
I made a meal plan this week as we're not going to be around much from Wednesday due to family commitments.
Anyway, my meal plan was meant to look like this:
Yesterday: Roast Chicken stuffed with minced pork (my version of sausagemeat) with brussels, homemade y puds (which DH thought were amazing, he was even more amazed when I told them I made them from scratch!) potatoes, leek and parsnip and broccoli.
Today: Bubble & squeak - we're actually going out tonight so todays meal can be scrapped.
Sunday: Chicken and bacon salad
Monday: Steak fajitas
Tuesday: Quesadillas with rice.
Anyway, having a look at how huge the chook was, it's clear I'm not used to having so much meat on a free-range, organic chicken!! It looks bigger than when I put it in the oven.
Anyway, I feel like I have enough to stretch this chook out til Tuesday night and forget about the steak at all. However I can't get to the point of not having enough left for tues or else I'll have to defrost the steak and there will be wastage.
Anyway, how can I pad this out to last till tues? Or am I best sticking with my meal plan?
I was thinking of this:
Sunday Lunch: Chicken and Goats Cheese Paninis
Sunday Dinner: Chicken Madras with rice
Mon: Chicken fajitas with the trimmings
Tuesday: Chicken Quesadillas
But then all the veg I have left over will be wasted. I'll have to throw away 8 large sprouts and half a broccoli.
Any ideas?

Personally I would strip the chicken of all the meat, freeze it, make chicken stock/soup, freeze that and then stick to the original plan. That way you won't waste your veg and you have frozen chicken & stock ready for your next menuplan.0

Ahh, I completely didn't think about freezing it!
Or is there anything I can do with the veg maybe? Can you freeze the veg?

Yeah, you can freeze the veg.
But I agree with Bunny200, personally I would freeze the chicken and stick to your meal plan. Trust me you'll be all chickened out by Tuesday, I've done this and it put me off chicken for ages.0 -
Rissoles are a great way to use your leftovers up.
Blend the chicken and veg with an onion and a couple of slices of bread and then mould into patties (you'll need to use flour as they tend to get pretty sticky!) grease a pan and fry them until golden brown. DeliciousSpring Fesitval Challenge: Save health & money! Day 1/7
