what to do with quince tree fruit?

  • I have a glut of quinces at the moment. I tried Nigella's recipe for quinces stewed in sweet wine, but it's a little bit too sweet for me. I have gleaned several recipes from various websites including:
    Roast Quinces
    Quinces baked with Cream
    Nigel Slater's Quince and lemon crisp
    Quince syllabub
    Fried quince empanadas

    Spuma di Mele Cotogne
    I don't have the urls any more but if anyone wants to PM me an email address I can send the recipes to you.

    I had to laugh at one site. It said having a glut of quinces was great, and here is something to do with them... take 2 quinces...! It will take me a long time to get through my glut at that rate! Unfortunately they have black spot fungus on the skins so I don't think they will store very well, and OH is not very keen.

    Quinces have a very high level of pectin, so I've read, so I would be amazed if you had to add any more to jelly to make it set. My jelly recipes all say to put the peelings and cores into the pan with the peeled fruit when making jams and jellies, as that way you extract more pectin. The seeds have a lot in, I think.

    I know how you feel fungus and OHwise:) Mine are relativley fungus free this year, but two years ago they were pretty bad.

    OH isn't terribly keen either and nor are the kids:rolleyes: Me, I love 'em. Why on earth I haven't tried quince syllabub before I do not know. Quince and syllabub must be the two most beautiful words in the English language.
