    P.S. I often chuck vegan chocolate chips in this recipe too - you can get them from Sainsburys (probably lots of other places too!), they come in a little purple packet. Yummmmmm.

    zoelikesjam, i can't have lactose either, the milk suggested was goats or soya, whichever doesn't upset lil 'uns tum.

    With cake recipe, have just made GF bread with oil and was a lil stodgy, unless that was me lol

    Not sure how well this will go with jam, but I am not a jam fan (sorry!) so it is hard for me to judge!

    Fluffy UnButtercream Frosting:

    Ingredients
    1/2 cup shortening (ideally non-hydrogenated)
    1/2 cup dairy-free margarine (ideally non-hydrogenated)
    3 1/2 cups icing sugar
    1 1/2 teaspoons vanilla extract
    1/4 cup soya milk or cream

    Directions

    Beat the shortening and margarine together until well-combined and fluffy. Add the sugar and beat again (few more minutes). Add the vanilla and soya milk, beat until all mixed in together, and lovely and fluffy.

    I've added cocoa powder to this to make chocolate-flavoured icing (quantity as desired); you could really add many things though, as itis very versatile - e.g. ginger, maple syrup, coconut, etc.

    Last time I made this, I iced the cupcakes then sprinkled little chocolate chips on top.

    Yum! :-)

    Or you can get ready-to-roll sugarpaste icing that is dairy-free, depending on what kind of icing look you are going for.

    No eggs, milk or butter=vegan. Google has lots of vegan cake recipes (all in the key words ;)). I haven't made it myself, but this looks yummy:

    Another vegan chiming in here. One of the faves I make for my non-vegan folks is this one:

    Absurdly Easy Chocolate Cake

    I got the recipe from someone else, ages ago, and was told to use the technique of make 3 wells in the mixed dry ingredients. Then you pour the oil into one well, the vanilla in another and the vinegar in the third. Then pour the *cold* water over the whole deal and mix together.
