Freezing bread - what am I doing wrong?

This is not by any chance bakery section bread is it ?
Many of these breads are not suitable for freezing as they have been frozen already and not cooked in between, and hence go all yuck for some reason.
The best breads to freeze are Hovis and Warburtons imho, supermarket own never does so well.Ermutigung wirkt immer besser als Verurteilung.

do you have a fast freeze button on your freezer? We do on ours and I switch it on for about 10-15 minutes when I put bread in the freezer, it makes all the difference0

Actually it does seem to be bread from Tesco's bakery that's the worst culprit, so maybe that's the answer. Thanks - it was really starting to bother me that I couldn't work out what was going wrong!Back after a very long break!0 -
I always freeze my bread at the top of freezer, the fast freeze draw, bakery bread as well, always thaws ok.0

My freezer is about third hand, unfortunately, so it doesn't have any useful functions like that - it's either 'on' or 'off'! It's something for me to consider when I eventually replace it, though. :think:Back after a very long break!0 -

We generally freeze hovis wholemeal with no noticed effects at all. But on the odd occasion where we have used other loaves, they haven't always come out as well.
I use small white uncut loaf from Sainsburys bakery. I have tried kingsmill as well. Unfortunately hubby won't eat nice, healthy wholemeal, only this overbleached white good for nothing bread!There is no issue so small that it can't be blown out of proportion0 -
I find that shop bought sliced bread like Warburtons freeze with no problems but bread from the bakery section doesn't seem to freeze as well. I don't know about home-made as mine always gets eaten before I can freeze it!Dum Spiro Spero0

I find exactly the same. Bakery section bread doesn't freeze well, but Kingsmill, Hovis etc freezes fine. Hence the "emergency" loaf of Hovis in my freezer!0

I have the same problem, frozen bread or sandwiches always come out with either frost burn or soggy, or both! Just can't seem to crack it so have pretty much given up!£2 savers club no.107 :j £36 so far.0

I freeze Warburtons bread with no problems. As I live on my own, a loaf does me 2 weeks. In the evening, I defrost 2 slices for next day sandwiches - only leave 10/15 minutes max, make the sandwiches & pack up on sealed box for following day. And their fine. AND I HATE STALE BREAD....CANT STAND THE STUFF
I think it must be the type of bread that you are trying to freeze0
