Fine cornmeal

I have a bag of this in the cupboard (bought for fried green tomatoes) but don't know what to do with the rest of it-any ideas? Breadcrumb substitute for homemade fishcakes and adding a little extra crunch to crumbles are about as far as I've got.
Sorry to be picky, but we hate polenta, and either don't or can't eat meat and salt (and that means no cheese either!).

Corn muffins? These don't have to be savoury - you can add whatever you like into them.
You can use cornmeal in place of flour in various baking recipes, particularly American ones. What Southerners call "biscuits" are made with cornmeal, for example. They use them for mopping up gravy, so perhaps not much good if you don't eat meat!
Surely you need SOME salt in your diet? Most baking recipes will need a pinch or so I'm afraid.0 -
If you like making bread Pilgrim bread uses cornmeal and it's very nice. Like all bread, you will need a bit of salt for flavour but I've found that with it being an American recipe it's quite heavily salted anyway so you can cut the quantitites down.0

I bake without salt, though I realise it's not ideal. You'd be surprised how little salt you can get used to. I've even got used to salt-free bread (took about nine months before I realised I no longer noticed how horrible it tasted).
Unfortunately the doctors won't even give me a daily limit to aim for-no added salt (or *especially* substitutes) at all - and I've seen what happens to people who ignore that advice. It isn't nice at all. So it's all OS cooking from scratch here-thank goodness for the slow cooker!!:T

My kids love this for breakfast on cold days. Just use it as you would when making porridge, but with a mix of milk and water, add vanilla, gorgeous.

You can use it to roll pizza dough onto - makes for a crispy crust

I'm not sure if fine cornmeal as the same as fine oats - but I used to love fine oats mixed with fried onions with a chicken for Sunday dinner. Add gravy for more guaranteed excitement.

I use instead of breadcrumbs for coating fishcakes etc. as much finer, good as a binder in meatballs. If you have a google there are plenty of recipes for polenta cakes and cornbread - I like lemon polenta cake best, and savoury cornbread is really easy and tasty. If you parboil potatoes before roasting, dry thoroughly and sprinkle with polenta for really crunchy potatoes.0
