Hi I am trying to be OS after a lifetime of dreadful waste with food. I am making a chicken risotto but after looking in my cupboard I only have pudding rice. Can I use that instead of arborio rice and what difference will it make? Thanks for your help. Jan.

Hi Jan. Welcome, and well done for making the change! You should be fine with the pudding rice, I use it as it's a wee bit cheaper than arborio, and it's a good substitute.
