Works great with pata as well, fry an onion, and dice and cook the chicken. mix with the persto, a little bit of milk for the sauce then mix all together.

i have mixed pesto with cream to make a lovely pouring sauce, its a big cheat, but is delicious. the chicken (fish for another day) can sit on a bed of rice/couscous/crushed baby potatoes and then pour the sauce over. ta dah0
