Question 1 - How do I make yogurt coated peanuts/dried fruit? Love them but find they are a bit expensive to buy in the shop, so can it be made at home?
Question 2 - What can I replace bananas with in some recipes for a healthy muffin/bar? Basically bananas make me ill so I can't eat them

Banana Lovers
Buy your bananas in bunches of 5 on Sunday. Then arrange them in order of ripeness and write a day of the week on each banana in felt pen, Monday on the ripest, Friday on the greenest to save time making those decisions on a hectic weekday morning

hiya.. i think that the 'yoghurt' coated fruits are not actually yoghurt coated, i think its some sort of whey/ milk powder mixed with sugar and fat.. have you looked at the ingredients for a clue?
replacement for bananas you can use any fruits or vegetables (maybe not onion or garlic though?!), carrot, courgette, grated apples or pears, dried fruits like apricots, figs, dates, tropical mix.. sultanas, prunes... then add seed mix for extra bite.. yummy!0 -
actually i just found http://www.ehow.com/how_2070900_yogurt-coating.html that looks quite promising...0

I've done a quick search for the ingredients in yoghurt coated peanuts and this is what I've found:
Yoghurt coating (55%) (sugar, vegetable fats, lactose, wheat flour, yoghurt solids, whey powder, dextrose, modified starch, glazing agent shellac, emulsifier: soya lecithin), peanuts (45%).

Yogurt Flavoured Coating (50%) (Sugar, Vegetable Fat, Whey Powder, Skimmed Milk Solids, Citric Acid, Emulsifier (Soya Lecithin), Flavouring), Roasted Peanuts, Glazing Agent (Shellac, Gum Arabic)

wonder if I can concoct a dairy free version?0 -
I've been making muffins with chopped pears in. I've used a basic muffin recipe & added 100g of chopped pears, 25 g sultanas, 1 tblsp of orange juice & the grated zest from one orange.
