I've left it late i know but my Dad has been critically ill so i've been distracted from the paqrty things.

Any good video sites of how to make a birthday cake appreciated, i'm not the best at baking!

The one I invariably end up making is this one of Nigella's. It is intensely chocolatey but not sickly sweet (the icing is but we prefer it plain and slightly warm with cream). It doesn't matter about your level of baking skill for this because it is so simple so you don't need a video. Just weigh out all the ingredients, get a big pan to heat/mix it in and a cake tin (I would definitely suggest using a liner) then mix and bake. Don't worry if it looks like a sloppy mess, if it were possible to get this wrong I wouldn't make it, I'm much better at fruit cake :)

And please don't worry that I'm recommending this for a 3 year old, the alcohol all cooks off and it just adds to the intensity of the chocolate flavour - all my children, neices, cousins and visiting kids love it.

not a video but step-by-step with photos http://www.cookuk.co.uk/cake/ChocolateCake.htm

There isn't a photo guide for this but it's easy and very popular - the Be-ro cake http://www.be-ro.com/recipe/showrec77.html
  • sorry to hear about your dad, how about just getting a shop bought cake and leaving the cake for another time. you have enough on your plate without having to worry about your cake.

if you still want to go ahead use an equal quantities amount. so weigh your eggs into a bowl, then whatever the weight of that is weigh the butter/marg, self raising flour , caster sugar.
cream the sugar and fat till its white looking. add a little beaten egg and some flour , beat that in, carry on again till all the egg is used up. gradually add the rest of the flour, add a teaspoon of vanilla essence.

put into whatever tin you want to use. (going by memory and a dodgy one at that, 200 grams of eggs should be enough to get a good quantity to do two tins.) bake at gas 4/5 ( see delias smiths conversion chart for the exact time if you dont have gas) for about 20 mins then giving it the knife check to see if it needs any more cooking, if the knife comes out clean its ready, if not then about another five mins or so
  • sorry for a choccie cake take out an oz of flour and replace with cocoa powder.

if you have a rectangle deep baking tin do a tray bake style cake. top with chocolate butter icing then top with a mixture of choccie sweets.
