vegetable flan question

Quick question please.

Do I need to add cheese to a vegetable flan or can I just go with eggs and veg?

All the recipes I've found have cheese added, but as I'm watching calories I want to omit it.

    I would guess that the cheese is there for added flavour and it should be okay to leave it out.
  • you could use a ricotta or light cream cheese - you need something to make the mixture a bit thicker than just eggs and veg imho!

    I thought it would be ok to leave out fluffybunnies, but then wondered about what you said littleredhen so wasn't sure and I don't want to waste it by trying if it wont turn out.

    dijon mustard makes a great flavour in its own right and does help make a tiny bit of cheese flavour go a lot further.
    Depending on what the veg is I don't always add cheese if that helps.

    Recipes only include cheese in them because most people expect cheese. It's a bit like a pizza recipe, you'd have to go a long way to finding one without a tomato sauce/cheese topping.

    Leave it out.
  • just googled vegetable flan recipe and found 2 recipes without cheese. Unfortunately I'm not allowed to post links yet.

    I will make one without then.

    I've got courgettes, asparagus, mushrooms, onions, tomatoes, peppers, and leeks.

    Not sure what combination to use yet, but I might go spicy and make it a spicy vegetable flan :)

  • it would just be like a tortilla/omelette. dont need to add cheese if you dont want to.

    Remember you can use a very small amount of a strong flavoured cheese, e.g. mature cheddar or parmesan so that you get max flavour with min calories

    I didn't get round to making my flan until today, but have to say it turned out rather nice and very moreish even without the cheese :)

    I used onions, peppers, mushrooms, sweetcorn, courgettes and asparagus, then added some cajun seasoning in with the egg mixture.

    It seemed to take slightly longer than a quiche to cook, but was definitely worth waiting for and something I will make again :)
