hi,
I was just wondering if any one knows of good recipes of the kebab sauces. i found 1 on the net but i wanna see if i can try some more and find a garlic sauce or garlic mayo that they use in kabab and pizza shops.

They had a recipe on Economy Gastronomy the other week (Students, making kebabs instead of picking up a takeaway).
The recipe for that was just "Mix about half a pot of greek yogurt, 2 spoons of tahini, chopped mint, juice of a lemon, mix it all round." so that'd have been a white one that tasted of mint.0 -
every kebab shop seems to have their own special recipe for chilli sauce, but this one looks about right to me?

I made that, it was fab:D:D:D:D:D0 -
My Indian friend who runs her own restaurent serves yoghurt with a tablespoon of mint sauce stirred in with her own made pakora - really yummy and very straight forward!0

Hmm! Kebab shops....special recipes
, sorry to disillusion anybody, I know there will always be exceptional shops, but most will be doing something like this;
Chilli sauce, a generous dollop of this

Garlic mayo, Garlic powder slaked off with bottled lemon juice and stirred into mayo or just bought ready mixed.0 -

Most of it will come by the gallon from the nearest cash & carry. Probably just before its use by date.

we make garlic mayo at home by just stirring a bit of finely crushed garlic into some mayo! dead easy0 -

Na, that is what I originally thought I have tried looking for this every where and no where has it right. Will try these 2 recipes as soon as possible.
I love a good doner kebab drunk or sober!!
