ds can't have dairy - have just successfully experimented with using homemade soya yoghurt & fruit instead of icecream (the shop bought soya icecream is soooo expensive!). this will mean he won't be left out when all the other kids in our neighbourhood have icecreams this summer as he'll be able to have Mummy's home made. (parties, picnics, playgroup etc etc). The soya yoghurt is prob healthier too than cheap shop icecream.
Does anyone have a recipe for brandy snaps or icecream wafers I can now use to make some icecream cones. It would be nice if it wasn't too high in sugar but don't worryif it contains dairty as I've got quite good at adaping recipes - I just need a place to start iywkim and can't find anything that doesn't look fiendishly complicated.

I don't have a pizelle iron either, but I thought a smallish omlette pan might do the same thing. I might have a go later this week. If I do, I'll post the [STRIKE]disaster[/STRIKE] outcome.
