was taught in school cookery many moons ago - that one heaped tablespoon of flour is roughly an ounce - has worked for me since! especially if i cant be bothered to get scales out and clean them afterwards just to measure out a couple of ounces of flour!

One well used recipe for yorkshire is: equal parts, by volume, of flour, milk, eggs. So any sized container of flour and the same sized container of milk. As for the eggs, to a lot of people the same amount in eggs seems too many, so just chuck in 1 egg by the sounds of the volume you're making.

Don't forget to let the mix stand as it does make a difference.

And when it was time to put the mix into the pan, my mum used to add a dash of cold water and beat that into the mix before pouring it into the tin.
