Wholemeal Bread Recipe needed - dairy free

Hullo,

Have done a search but fialed to find anything - I want to make wholemeal bread in the breadmaker, but dairy free. All the recipes I have found involved milk and/or butter.

I used to make bread from packet mixes and want to crack out the bread maker again but my daughter is lactose intolerant, will only eat brown bread and I want to save some money by making it from scratch..

Does anyone use Vitalite for breadmaking with any success? And does anyone have a milk free recipe?

I've ordered some strong wholemeal flour and quick action yeast from Asda - hope that's right!

So many questions ... :o

  • I don't use a bread maker but I make wholemeal bread every week. I never put any dairy produce in it (except butter to grease the tins).

    All you need is flour, water, yeast and salt.

    Simply replace milk with water and the butter with oil or leave out the fat completely. It is only there to make the bread easier to cut and give a slightly softer texture. The milk makes it softer too but not necessary for a tsaty loaf.

    Hi Trinitybleu,my machine is a Panasonic,and I tend to use this recipe,for a large loaf.You can use all wholemeal,(I like to use half and half with strong white-still a brown loaf but lighter)
    1 tsp yeast,475g flour(1lb1oz), 1 1/2 teasp.sugar,1 1/4 teasp salt.The recipe gives25g(1oz) butter,but I always substitute veg oil instead,and its always fine.340ml water.HTH

  • Hi, I use olive oil instead of butter and soya flour instead of milk powder.

  • My OH is vegan so all our bread has to be made dairy free.

    Any recipes I use I just substitute the butter for olive oil (1oz butter replace with 1tbsp olive oil).

    I simply leave the milk powder out, it isn't necessary at all to the recipes (unless you are making a milk loaf).

    For wholemeal loaves I may put a little extra oil in (maybe half a tbsp), it seems to stop them from going dry too quickly.

    We prefer half and half wholemeal flour and white flour though as find the 100% wholemeal just a bit too dense.

    For info I use a Panny....my favourite piece of kitchen equipment!

    I've just found a breadmaker recipe that gives the ingredients as follows:

    1/3 of an ounce fresh yeast
    1 lb 2 oz strong w/meal flour
    1 1/2 teaspoons sugar
    2 tablespoons oil (I assume olive)
    1 1/4 teaspoons salt
    350 ml water (whatever that is in English).

    I haven't tried it myself, as I do use butter to make bread, but thought it might be of help. :o

  • Reporting back - have tried both recipes although with less salt as we have heart problems in the family and DD is only 2. We used to low salt foods, so I used about half the amount suggested. They taste ok (DD ate the end slice off the first loaf I made without any topping, declaring it "deeeeeee-licious" after every bite :smileyhea), but not yummy iyswim.

    What can I add to make it tastier?
