Lamb Question

Evening all!

We got our lovely order from Tescos delivered tonite. ordered a shoulder of lamb (supposed to be under 2kg for £8) we got a 2.5kg for £12.80!! (it serves 10peeps and theres only 2 of us!)

can we freeze the leftovers once we've had out inital dish from it? we then plan on havinf lamb lasagne and then morocan lamb but we will still have 4 servings left.....any ideas for dishes or tips on freezing then recooking the left overs? xxx

    Looks like it will be rubber lamb at your place, keza! Not to worry, this also happens regularly in our household - and like you, I freeze the leftovers in 2-person lots and then use it later for other dishes as & when. Lamb is very versatile, apart from what you mention above, the leftovers do well in things like curry, lamb biriyani, shepherds pie, stir-fry and lentil salad. I have never had to waste anything!
