Hairy Bikers Mayonnaise??

Hello - I wasn't quick enough to catch this (story of my life) anyway they were making foolproof mayo. I got it was
2 Yolks
1 Whole egg
1tsp sugar
1tsp mustard
but I'm pretty sure I'm missing something?

  • Oil! You need oil to make mayo. I never saw it so no ides how much for their own recipe but I'd say usually about 100 - 50ml or so per egg. Usually I'd add white wine vinegar too.

    Just a wee tip, you usually need to add the oil drip by drip (literally) or it will curdle x

  • Thanks I'm going to give this one a go. Sometimes I make mayo and it just doesn't work, other days its fine. I've always thought its a bit temperamental and depends on what the weather is like (like bread)?
