I've found a recipe for a flourless fruit cake that says its a perfect base for a birthday cake, but it does contain 4 eggs, don't know if someone could suggest a substitution for those.Woofles you need to get out of that house. You are going insane:eek: - colinw
apologises for spelling mistakes - google toolbar and I have had a hissy fit and I've lost me spell checker.0 -
Vegan, Gluten-free and Eggless cake
It is possible to get an egg substitute from health food shops. Also gluten free flour. But TBH neither of these work quite as well as the real thing and cakes/bread etc can end up somewhat dry.
How about a cheesecake or an ice-cream cake instead?
Just remembered doing a Chocolate fridge cake for a friend using gluten free biscuits - made an ammonite shaped 'tin' out of cardboard and decorated it with more chocolate to look like a fossil.
(My family include vegans and carnivores, chocolate migraines, diabetics, dairy allergy and belladonna allergy so I've had to come up with a lot of substitutions, sometimes you just have to think laterally rather than try to fake it.)Eat food. Not too much. Mostly plants - Michael Pollan

You can make any vegan cake with gluten free flour, like the one by Doves Farm, I just add extra wheat free baking powder to make sure it rises. Here are a couple you could try
Carrot Cake:
225 g wholemeal flour (or gluten free flour); 225g grated carrot; 100g margarine/butter; 100g brown sugar;2 teaspoons cinnamon;
4 tablespoons clear honey; 1 tablespoon lemon juice; 1.5 teaspoons baking powder(approx 4 tsp is using gluten free flour)
Preheat oven to 350F. Grease a loaf tin and line bottom with greaseproof paper. Melt butter, honey and sugar together and add to other ingredients in a large bowl. Put in tin and bake for 1 hour at 350F (175C gas mark 4). Make a cream cheese based or buttercream icing.
Brazil Nut and Banana Brownie
2 very ripe bananas (8oz/225g flesh)
6 oz (170g) gluten-free flour
2 tbsp cocoa
4 oz (115g) sugar
5 fl oz (140 ml) vegetable oil
5 fl oz (140 ml) water
1 tsp bicarbonate of soda
2 oz (55g) brazil nuts
1. Preheat the oven to 180C/350F/gas mark 4.
2. Mash the bananas in a mixing bowl, then sieve in the flour and cocoa. Add the sugar, vegetable oil and water, reserving 1 tbsp of the water.
3. Dissolve the bicarbonate of soda in the tbsp of water then add to the bowl. Mix well then stir in the brazil nuts.
4. Put the mixture in a greased brownie tin and place in the oven. Bake for 40 minutes or until a cocktail stick comes out clean. Eat within a day or two.
Gluten-free.
Chocolate Cake
Cake
6 oz (175g) self raising wholemeal/white flour
3 level tsp baking powder (a little extra if using gluten free flour)
1 oz (25g) cocoa
3 1/2 oz (100g) Barbados sugar
4 1/2 fl oz (125 ml) vegetable oil
11 1/2 fl oz (325 ml) cold water
1. Preheat oven to 190C/375F/gas mark 5.
2. Place all the cake ingredients in a bowl and mix thoroughly.
3. Place mixture in greased loaf tin and bake for 30 minutes in the pre-heated oven. Cool on a wire rack. Ice however you prefer.
Making cakes like this involves a little trial and error, so it might be worth doing a practice run!
