Help - cooking a roast - Sweet potatoes, argghhh!

  • Ah no still cooking - lol, i know, crazy to cook a roast this late but the OH won't get in till 11pm and i didn't want to cook it too early. His work shifts are crazy but he'll love a roast even if it was 3am lol - me on the other hand, i'm not sure i should be eating so late. Oops!

  • i am not a gravy fan so i often do sweet potatoes in their own tin cut like big 'wedges' and roast them with plenty of olive oil and about 6 fat garlic cloves still in their skin...when mostly browned i add a handful of cherry tomatoes..roast for a further 15/.20 mins..the toms should burst and their juice mixed with the garlic and oil makes a hot vinaigrette..fab with roast chicken..yum

  • Oh yes it was lovely - i got perfect crispy potats so i was v.happy. OH loved the dinner, i scoffed the crispy chicken skin (all of it:eek:) before he even got home which he realised :o:p The rest was all pretty perfect so i was very chuffed with myself. Sounds silly to be so proud of a roast but i really was :D

    And the rest of the week has been just as good - nothing has come out of a pre-prepared packet, or even out of the freezer for that fact - everything has been fresh and my DD (3yrs) has scoffed everything i have made without any fuss, which is unusual, so at least i am keeping her happy too, and healthy ;)

    My next challenge will be a home made lasagne :D
