My daughter has egg and nut allergies so I am always on the look out for easy recipes for biscuits, cakes etc.
I saw this recipe in a magazine and tried it, it is very easy and the biscuits are delicious.Makes 24
150g butter
40g icing sugar
165g plain flour
2 tablespoons custard powder
nutmeg
!. Preheat the oven to 170C/150C fan /gas 3
2. Cream the butter and sugar together until light and fluffy. Sieve the custard powder and flour together and mix in to creamed butter mixture.
3. Roll the dough into a sausage shape. Wrap tightly in cling film and put in the fridge for 1/2 hour until firm.
4. Slice dough into 24 slices and put on greased baking tray. Grate fresh nutmeg over the top and bake for 15-20 minutes until pale golden.

do you use custard powder that you add boiling water to or the one that needs sugar and milk.
Thanks0 -
Nigella has a recipe for custard creams. I doubt it would be suitable for your daughter's allergy, but it does include a recipe for the cream filling to sandwich the biscuits together. I find the biscuit recipe too rich, and prefer a plain biscuit with the custard flavoured filling. A child in my class used to make some very tasty ones from an Usborne book of children's recipes.
