Vegetarian Recipe Help

Help.
My daughter needs a recipe for Home Ec. at school.
Has anyone got a mild veggie chilli or vegetable bolognese recipe, that will cook in less than 1 hour.
I am struggling as my daughter is :-
No milk or milk derivatives.
No soya or soya derivatives.
No goat or sheep milk.
We are open to any suggestions.

*Use quorn or Green Lentils with your normal Chilli or Spag Bol recipe. If I make it with quorn I also add a couple of finely grated carrots and a handful of red lentils. How about using mostly vegetables and beans for a vegetable chilli?
I'd do this:
Heat 1 tablespoon oil in a medium sized pan.
Add 2 cloves garlic, chopped
2 onions, chopped (preferably red onions)
2 sticks celery, chopped
and cook for about 7 mins on a low heat.
Then add a 15oz tin of chilli beans
a 15oz tin of cannellini beans
and 2 15oz tins of chopped tomatoes. Mix thoroughly and bring to simmering point. Stir in 2 teaspoons tomato puree and 1/2 teaspoon yeast extract.
Season to taste and cook for 25 mins on a low heat. Then add 1 yellow or orange pepper (chopped) and cook for a further 10 mins. Taste to check seasoning/chilli level, serve with rice or pasta.

ha ha i know! Not sure if you're following me, or I u. My computer is in the middle of my living room. I tend to reluctantly gravitate towards it if i have a spare second. For bolognaise I usually sweat an onion in some olive oil, then add grated courgette, mushrooms and quorn mince. After that a couple of tins of toms, pinch of sugar, dried oregano and fresh marjoram/thyme/oregano (whatever's growing and needs a trim). Let it all simmer for 10 mins (more if there's time), add a splash of red wine vinegar if I remember have with spaghetti and loads of parmesan - or non-dairy cheese in your daughter's case. The whole thing can be cooked and eaten in half an hour.0

I had always thought that Quorn was soya based, so never really looked at it.
So, a little research, and it's fine for my daughter.
It will make things a lot easier
I think I will get the stuff for msb's chilli recipe for tomorrow's lesson, and try something with quorn the week after.
