Baking Help Please!!!

Hi everyone, I'm in the mood to do a bit of baking and thought I would try and use up what I have in my cupboard - can you lovely lot help with some ideas of what to make with this assortment?!! :D

517g plain flour
1kg self raising flour
559g granulated sugar
526g caster sugar
269g muscovado sugar
bicarb of soda
baking powder

coca, golden syrup, vanilla essence, lemon extract/essence

doesn't need to be fancy (as I'm not very skilled!!!) but just want to make full use of what I have!!

    any dried fruit of any kind? spices? eggs? margarine/butter?
  • sorry!! yes to eggs and marg/butter.

    won't use dried fruit or spices as hubby is a fussy devil!!!

    You could make what my children call Domestic Godess Cake :D Beat together 200g each of sugar, butter, eggs and SR flour, and 1tsp baking powder. Beat for about 2 mins on high, until the mix is light and fluffy. Bake in a prepared tin at gas 5 for about 30mins.

    Make an icing of icing sugar and a small amount of water (you really need very little, so add with a tsp ;) ). You can colour this with a drop or 2 of colouring. Pour this over the cake and decorate with sugar strands or silver balls, or both :T

    Basic Victoria Sponge springs to mind, if you've got any jam.

    6ozs margarine and 6ozs caster sugar (can use granulated) creamed together. Add 3 beaten eggs gradually to avoid the mix curdling - but don't worry if it does as it never seems to make a difference to my baking. Add 6ozs Self-Raising Flour a bit at a time and make sure it all properly folded in (dropping consistency - add a little milk or water if it needs to be a bit softer).

    Put into 2 greased/floured/lined 8inch sandwich cake tins and bake for around 25mins at Gas4/180C/350F.

    when it's cooled sandwich together with jam or buttercream (or both :drool:).

    Buttercream Recipe - 3ozs butter/margarine creamed with 6ozs icing sugar (be gentle it can fly all over the place). Spread on one flat side of your two cakes and sandwich together or jam on the other one.


    You can use the same recipe to make fairy cakes.
    Pipe buttercream icing on the tops if you like.
    Or cut off a small slice from the top of the fairy cake, add a little jam (or buttercream) and put the piece back again.


    Try adding a little grated lemon rind to the basic cake mix to make it lemon flavoured and use some lemon juice (or couple of drop of flavouring) mixed with some icing sugar to make a water icing.

    OK if you've got Oats, you could do Twinks with (1)
    Victoria Sponge (2) Could vary this and make lemon drizzle cake/chocolate cake
    Cupcakes (as victoria sponge)
    Jammy Dodger type biccies(3) (need jam)

    Just realised this could get very long.

    Brownies

    Chocolate Brownies

    Ingredients
    ¾ cup butter (170 g)
    1+½ cup sugar (330 g)
    2 teaspoon vanilla
    3 eggs
    ¾ cup all-purpose flour (85 g)
    ½ cup cocoa powder (50 g)
    1 teaspoon baking powder
    a pinch of salt (optional)
    3 oz (100 g) chopped pecans or walnuts (optional)


    Method
    1.Preheat oven to 350 deg F (Gas mark 4 or 180 deg C).
    2.Line a 13 x 9 in (33 x 23 cm) cake tin with grease proof or other non-stick paper and grease the tin. Melt the butter.
    3.Beat eggs with sugar, and add vanilla, flour, cocoa, baking powder, salt (optional) and melted butter.
    4.Add chopped nuts.
    5.Bake at 350 degrees until a wooden pick inserted in center comes out clean, approximately 20-30 minutes.
    6.Cool the cake. Dust with powdered sugar or glace with your favorite chocolate frosting.



    Chocolate Pudding

    Chocolate fudge Pudding


    First find a cup that holds 8 fl oz of liquid(a US cup measure)

    Grease a shallow baking dish - about 9'' by 13''

    Sift together
    1 cup plain flour
    2 tsp baking powder
    1 tsp salt
    ? cup sugar
    2 tbsp cocoa

    add
    ½ cup milk
    2 tbsp melted butter or marge
    1 tsp vanilla extract(optional)

    Mix until just smooth,then spoon into the baking dish.

    Mix together
    4 tbsp cocoa
    1 cup soft brown sugar(light or dark)

    Sprinkle over batter in dish.
    Pour over all 1 ½ cups of just-boiled water - DO NOT STIR

    Bake for 40 mins at 180c
    Serve warm with whipped cream......yummmy
    When it's cooked there will be a thick fudgy sauce a the bottom of the pudding and a cakey bit on top. It's nice with some instant coffee(about a dessert spoon) added to the cocoa and sugar bit.

  • if you have some vegetable oil you could make the following muffins (although i suppose you could melt the marg/butter and use instead)

    225g plain flour
    3 teaspoons baking powder
    140g sugar
    8 floz milk
    3 floz vegetable oil
    1 egg

    pre heat oven to 190C. mix all dry ingredients together and stir well, mix all wet ingredients in a jug and again mix well, (at this point you could add flavourings 1 tablespoon cocoa powder, choc chips - my fav is white chocolate and raspberry, vanilla essence, lemon juice and grated rind) ~ add wet to the dry and beat. Put into muffin cases and bake for 20 mins.

  • Just finished!

    Made flapjacks, little lemon sponge cakes and a big chocolate cake!! All went well.

    Now the rubbish bit - tidying up!!!!
